Lunch Recipes (soups and sloppy joes)

Soups

Chicken Noodle~ ~ yumm. Its good the way it is, I tend to add warm water and then walk away for a moment to let it soak before I finally cook it. Just to help soften the dried noodles.
~You can also add a splash of low sodium soy sauce to make it more of an Asian style noodle soup. Also good.

Chicken and Wild Rice~ ~ Like the others, its good just the way it is, let it soak for a moment if you like. If not you wont break any teeth on it.

Tomato Soup~
~Good just the way it is, but I use it more for sandwichs than just soup. Remember to feel free to experiment with what makes you happy.

~Grilled Cheese Tomato Sandwich
1 packet Medifast Cream of Tomato Soup
1/4 cup egg beaters (or 1 egg)
3 TB Salsa
3 tb water
1 slice low fat mozerella cheese
*Note - Fat Free American cheese can count for an optional snack (though not recommended by Nutrition Support) or can be counted towards your lean. *
Throw this all into a sandwich maker and let it cook up for about 5 minutes, fold the two “sandwiches” in half and add your cheese to the middle.
This counts as 1 Medifast meal, 1/8 leanest, 2 condiments and 1 optional snack.


*new changes* Tomato sandwich with spinach and ham
1packet tomato soup
1 egg white
3tbsp water
sprinkle of pepper and smoked paprika
cook in your sandwich maker for about 5 minutes. Remember to spray pam so it doesnt stick. When its done, take it out and add a piece of cheese, a couple of pieces of spinach, and if you want a small slice of lean ham. I add sometimes some spicy mustard, yumm. Just remember to count any extras from your lean and green, no matter what you decide to add.


Egg to Liquid Egg Substitute Conversion:
1 egg = 1/4 cup egg substitute
2 eggs = 1/2 cup egg substitute
4 eggs = 1 cup egg substitute
8 eggs = 1 pint carton egg substitute

Sloppy Joes

These are yummy on their own. They don’t make much in volume but man are they good. But when it says a deep cup to cook in, it means a DEEP cup. Don’t use a mug like the picture shows or half of your lunch will climb out and decorate your microwave. I hate dirtying extra dishes but in this case its called for. Just use a big cup or bowl and transfer to a regular mug for consumption. Yumm

~I’ve also found that a wider bowl rather than a tall cup helps it cook more evenly as well has lowered the amount of Joes I find in my microwave.
